This Week’s Video: Wilted Greens, Marinated Mushrooms & Sweet Chilli Sauce

Wilted Spinach w Marinated Mushrooms

Today’s recipe is another staple for me.  I love it at the weekend for breakfast (instead of eggs-on-toast or a fry up) and I also love it for lunch and supper too.  This recipe is also a sure-fire hit with foodies of all kinds, cooked or raw.  And did I mention it was super simple to make?  Get your ingredients in and try it this weekend 🙂

I’m feeling very excited because I’ve just been to my local high street and discovered that they’ve planted trees in the few days since I was last there!  And there’s a gorgeous new cafe called The Faraway Tree, which I can’t wait to try out.  I can see myself taking regular breaks from my home office to go and work there.

Mark and I are off to pick up our ‘Big Trip’ campervan this weekend.  I’m really looking forward to personalising it over the coming months.  If anyone’s got any small-space living tips I’d love to hear them!  I’m not sure how we’re going to fit our lives into such a tiny space.  I imagine it’s going to be fun and challenging, in equal measure!

Wedding plans are gathering speed chez nous.  Did I mention it will be far from conventional???  Firstly, our wedding party is over a whole weekend and, secondly, we’ve got a fancy dress theme for the actual wedding.  Mark and I love tapping into our inner child and dressing up, so I can’t wait to show you the photos 🙂

There’s only 9 days to go until our new group start their Vitality Detox.  Hurray!  I’m so excited for everyone on it already.  I’m extra loving my work at the moment, because I’m really focusing on living my ‘Love and Connection’ value more consciously – which also includes loving and connecting with myself more.  Bonus!

    Hi Saskia. Love your recipe videos! I often have the wilted greens & chilli dressing with poached eggs (such a quick, easy, delicious recipe). Did not think to include the marinated mushrooms! x
