It’s my green version of the Red Thai Curry that we’re making this weekend at the Adventures in Raw Main Meals workshop. I’ll eat it on its own, with cooked brown rice or rice noodles. And sometimes I’ll heat it up – warmed through but still with a bite 🙂
This Thai Green Curry tastes so amazingly fresh – much fresher than any cooked green curry. If you like the cooked version you will LOVE the raw version. It’s one of those dishes that you want to eat with your eyes closed to savour all the divine flavours.
I use organic tinned coconut milk in the recipe. It’s not raw, obviously, but pretty much everything else is. In the video I give you tips on how to make your own raw coconut milk if you prefer.
