This raw, spicy tomato soup is one of my favourite cold-weather soups – perfect for spring before the sun starts doing its thing. When you’re in a hurry or want something comforting to take to work, make this! If you’re taking it to work, make it with 100ml of cold water at home, then top up with 200ml of boiling water from the kettle at work.
A lot of people struggle with eating raw when it’s cold, and I’ve found that more often than not it’s because of not having the right recipes. Remember, you can heat raw food (see this blog post) and if you eat your raw dish with some cooked rice or a baked sweet potato, or some gluten-free toast, you’ll find it just as satisfying as a fully cooked meal.
