I’m doing a few days of dietary re-set in the form of juice during the day and raw in the evening, and tonight I’m having this recipe! It’s light but really satisfying, so a great way to break a fast or fill up after a long day at work.
Inspiration for supper
Following on from last week’s post about what to eat for supper, today’s recipe video is an evening meal staple for us – Mark and I LOVE Guacamole Mushrooms 🙂 They are incredibly tasty and satisfying and will last 24 hours in the fridge. The mushrooms take on a more cooked texture the longer you leave them. Avocados do tend to go brown as they oxidise, but the lime in the guacamole usually helps keep it’s natural green colour for quite a while.
Not into mushrooms? Don’t worry
This is a great meal to serve to raw food newbies. I’ve lost count of the amount of people who tell me they don’t really like mushrooms, only to discover they love raw ones. I like to serve these beauties with a big salad and maybe some cooked quinoa.
