I can’t believe our wedding is only 4 weeks away!  I feel like I’m spinning a lot of plates at the moment – we’re doing all the wedding planning ourselves and it’s a 3 day event (more like a mini festival!).

And then there’s packing up the house and organising our departure to Canada in 10 weeks time.  I’m also designing a new Raw Freedom programme that’s going to be life-changing for people, as well as running the Summer Vitality Detox and coaching my one to one clients.  Phew!  Life is rich and full!!

And, I admit, occasionally a bit stressful, although I am getting brilliant at walking away from overwhelm these days thanks to all the work I’ve done on myself.  Hurray for self-development!

Going away in September suddenly feels very close, and I can’t quite believe we’re ACTUALLY doing it – packing up our lives and setting off for a TWO YEAR adventure.  Crazy and gorgeous and actually making a dream come true!!

There have been times when we thought it might not happen.  So much money to save.  So many logistics to organise.  Did we even want to do it at all?  But we kept the vision and didn’t give up, and now it really is, really is, really is happening!!

People have been asking me if being away for 2 years means I won’t be working during that time.  In case you want to know the answer too,  I’m planning to do Vitality Detoxes a few times a year (plus the new programme that I’m creating at the moment – I can’t wait to share it with you!).

We’re also planning to stop still for two 6 month periods, so I’ll be able to give life coaching during that time too (not sure exactly when that will be yet, but I’ll keep you posted).

Raw Chocolate Spread – The Recipe

I always have a jar of today’s recipe in my fridge.  When the desire for something rich and treaty hits me and I haven’t got the time or head space to make a batch of energy balls, my raw chocolate spread is there to rescue the day!  It’s super simple and super quick to make.  The agave syrup I recommend is the raw, unprocessed type that is full of vitamins and minerals.  Don’t use the more readily available stuff in the supermarket – your body will react to it like normal sugar.

  • 1/2 cup extra virgin coconut oil
  • 6 tbsp raw cacao powder
  • 6 tbsp raw agave syrup or honey
  • 1 tsp vanilla essence
  • 1 pinch mineral salt

Steralise a jar by putting it in a hot oven for 10 minutes.  Take it out of the oven to cool.

If your coconut oil is solid, stand the jar in a bowl of hot water to melt it.

When your coconut oil is liquid, add to a bowl with all the rest of the ingredients and mix thoroughly, using a whisk or spoon.

Place in the fridge to set.

Et Voila!  The most delicious raw chocolate spread ever 🙂  Eat in on apple slices, or rice cakes or toast with slices of banana.
