Raw Beetroot Almond Pate

The bright pink colour of today’s recipe, my Beetroot Almond Pate, is the perfect accompaniment to summer.  For lunch, I love it dolloped on my plate with a big leafy salad.  Or, for a mid afternoon snack, I’ll have it on rice cakes with slices of cucumber, topped with fresh alfalfa sprouts.  This pate lasts for 4 days in the fridge, so it’s a great recipe to make at the weekend and have ready for weekday lunches.

Actualisation a.k.a. Reality versus Perception  

I’m back in Bristol now, and looking forward to this Saturday when I’ll be holding my one-and-only workshop at my home this year, Adventures in Raw Main Meals.

After my many weeks of  being in Devon it’s great to be back in the city, practising keeping my country pace.  This includes going out in the middle of the day with girlfriends, pottering around my garden, doing a few bits of D.I.Y. and listening to my latest favourite audio book whilst sunbathing in the garden.  Of course I’m working too, but I’m keeping my focus on work/life balance and it’s working beautifully 🙂

The reason for the subtitle above is the audio book I’ve just mentioned.  One of my beautiful clients, Maureen, gifted me Wayne Dyer’s autobiography, ‘I Can See Clearly Now’.  The timing could not have been better!  Wayne Dyer is a genius when it comes to living a life of truth and authenticity; of following the callings of your heart and honouring your intuition.  I’d never heard of the term ‘actualization’ before, and now that I have I realise it’s what I (and probably you) are trying to achieve in this life.  We want to be the very best of ourselves, in a spiritual and practical sense.  We want to live from a place of love, acceptance and compassion, for ourselves and others.

I believe 100% that the food we eat can help as achieve our potential, mind, body and spirit.  Long may this exciting, challenging and rewarding journey continue!
