Banana Coconut Porridge

Breakfast is often the hardest meal to find healthy alternatives for.  Toast and cereal are just so easy, and yet eating them means you start your day with the most de-energising food right from the get-go.
So, what should you eat that will keep you going til lunch?  What’s quicker than a juice, but more sustaining than a smoothie?  What are the options if you want to EAT your breakfast rather than drink it?  This Banana Coconut Porridge is the perfect answer.

  • 1/2 cup of raw buckwheat, soaked overnight and rinsed
  • 1 handful of almonds, soaked overnight and rinsed
  • 1 pinch of mineral salt
  • 3 tablespoons of dessicated or raw coconut
  • 1cm of fresh ginger root
  • 1 teaspoon of honey or agave syrup (optional)
  • 1/2 cup of water
  • 1 banana, sliced

blend everything except the banana until smooth and creamy. Top with sliced banana and a sprinkling of coconut.

This is one of my favourite breakfasts from my recipe book.  It’s so super quick and easy, and buckwheat is a miracle food.  It’s alkalising as well as being high in protein and a good source of easy-to-process carbohydrate, so it’s a great start to the day.  This porridge will keep you going all the way to lunch.
